Pavillon blanc 2016, a generous and fresh Bordeaux dry white
The Sauvignon Blanc from which Château Pavillon Blanc 2016 of Château Margaux is elaborated was harvested between the 8th and 13th of September, and represents only a third of the production, following a very strict selection. It was not easy this year to vinify very intense whites with absolute acidity, since the acidities ended up declining, due to very dry and sunny days, if the teams waited too long. When whites lack acidity, they lack freshness and ageing capacity as well. This is a verifiable fact. But this is not the case with this White Pavilion, whose harvest dates in the Margaux appellation arrived early enough to preserve this essential acidity.
Pavillon blanc 2016 of Château Margaux possesses an incredible aromatic finesse with a lot of freshness (sunny days and cool nights favoured aromatic expression). The aromas are neat and crisp with notes of passion fruit, lime confit and juicy mirabelle. The entry into the mouth is precise with good tension and allows for development on the mid-palate of a wine body with volume but never unbalanced. On the contrary, the acidity of the wine counterbalances a generous fat. The end of the palate, revealing flavours of exotic fruits, is long, generous, and talkative without lack of elegance. A dry white Bordeaux with plenty of elegance.
