Description
A classic white wine from Chablis with peach, banana and citrus aromas
Chablis is a well-known appellation of Burgundy, producing dry white wines with great character. The Billaud-Simon Chablis Village is a single-varietal Chardonnay from vines planted in the region's emblematic Kimmeridgian soils. The wine is matured in stainless steel tanks, for a period of 8-10 months, depending on vintage. These stainless steel vats preserve the characteristic freshness and minerality of the wine. The finished product is racked twice before it is bottled, late in spring. The 2016 vintage will be remembered for its challenging weather conditions. The wines from this year are concentrated, powerful and very smooth, displaying remarkable tension and a potential for age.
The Chablis Village 2016 from Domaine Billaud-Simon shows off a brilliant white-gold hue with pale green glimmers. The nose, very classic of Chablis, offers aromas of peach, banana, citrus fruits and hints of brioche. The palate of this white Burgundy wine is very balanced, fresh and elegant. The smooth, rich structure, along with the ripe fruit and mineral flavours, linger until the end. To keep until 2021.
This comment is mainly intended to describe at a given moment the general profile of the wine. Note that over time, the wine (which necessarily evolves in the bottle) may develop other organoleptic qualities.
