The estate
Founded in 1731 in Beaune, Bouchard Père & Fils is one of the oldest estates in Burgundy. For nearly 3 centuries, 9 generations have succeeded one another with the ambition of creating an exceptional estate in Burgundy.
Patiently built up over the years, the vineyards of the Bouchard Père et Fils estate currently spread across 130 hectares of vines. Combining prestigious appellations with exceptional plots of land, the Bouchard Père & Fils vineyard enjoys a unique wine heritage.
The vineyard
"Les Porrets Saint-Georges" Domaine 2011 by Bouchard Père & Fils is a Nuits-Saint-Georges 1er cru wine that stems from a 0.32-hectare vineyard. Acquired in 2007, this vineyard rests on clay-limestone soil and is adjacent to the Cailles climat. This exceptional terroir takes its name from a variation of the word "poiriers", which were cultivated on these lands before vine growing.
Vinification and ageing
Once the grapes have been harvested by hand and sorted, the grapes are partially or totally destemmed, depending on the vintage. Alcoholic fermentation takes place in small containers with gentle pressing. Vatting for 12 to 15 days depending on the vintage. The wine is aged for 10 to 18 months in French oak barrels (60 to 85% of which are new) in the Bastion cellars of the old Château de Beaune.
