The estate
Founded in 1998 by Michel Grisard as the replanting of the Cevins hillside, the Domaine des Ardoisières is the star of quality revival in the Savoie wine region. Michel Grisard, an authentic biodynamic winegrower, was joined in 2003 by Brice Omont, an agricultural engineer from the Champagne region, in seeing this ambitious project through. Brice Omont has been running the estate since 2010, along with 12 silent partners.
The vineyard
Schiste 2020 is an IGP Vin des Allobroges wine that stems from a vineyard placed on the Cevins hillside on schist, mica schist and silt shallow soils. The vines are cultivated in terraces on a slope of 60% and face south.
Winemaking and ageing
Once the grapes were harvested by hand, a gentle pressing was carried out, taking into account the characteristics of each grape variety. The light cold settling was done before funneling into barrels where the alcoholic fermentation took place, aided by indigenous yeasts. Malolactic fermentation was not done in any order. Ageing took 12 months, then the wine was bottled.
