The estate
Founded in 1880 and situated in the heart of Provence, the Grande Séouve estate enjoyed a fresh impetus following its purchase by Eric Kurver in 2009.
A lover of fine wine, this Dutchman renamed the estate Maison Saint Aix and launched the AIX rosé brand, with the goal of creating an exceptional and affordable Provence rosé wine. Major work was carried out, the vines were replanted and the winemaking tools were modernised.
The vineyard
One of the largest in the appellation, the Maison Saint Aix vineyard spreads across 75 hectares of vines. Situated on the Bedes plateau at an altitude of 420 metres, this terroir benefits from an array of valuable assets that contribute to the production of a fine Coteaux d'Aix-en-Provence wine (rich clay-limestone soil, high-altitude climate, sunshine, cool nights and the mistral wind which protects the vines).
Vinification and ageing
In order to preserve their freshness, the grapes are harvested exclusively at night. Fermentation at low temperature and away from oxygen. 30% of the juice comes from the rosé maceration and 70% from direct pressing.
