The Estate
Dating back to 1808, Maison M. Chapoutier has become today an essential reference in the Rhône Valley. Under the direction of Michel Chapoutier since 1990, this family estate cultivates its vineyards according to biodynamic principles. Owned by the Chapoutier family, the domaine is distinguished by its exceptional Hermitage cuvées and its braille labels since 1996, demonstrating an approach to the Rhône vineyard that is both traditional and innovative.
The vineyard
This Domaine Combe Pilate "Syrah" is a wine from the IGP Collines Rhodaniennes appellation, where the vines flourish on complex soils composed of clay, quartz pebbles, limestone gravel, and loess.
Winemaking and Aging
Hand-harvested. Full destemming before fermentation using indigenous yeasts. Maceration takes place in concrete vats for 3 to 4 weeks at around 30 °C, with daily tastings and regular pump-overs supplemented by occasional punch-downs. After draining, the wine is racked into demi-muids that have been used for three to four wines. Malolactic fermentation takes place in wood before about 12 months of aging in demi-muids with a racking in spring.
