The estate
Yannis Valambous' childhood memories brought him back to Vassaltis, on the island of Santorini, in Greece. As a child, he enjoyed many family holidays there, a place where his father acquired vineyards. When he inherited his father's vineyard, Yannis Valambous set about making his dream come true: to breathe new life into this promising land. Working with Elias Roussakis and Yannis Papaeconomou, he attests that the new generation of Greek winemakers, thanks to their skills and mastery of the art of winemaking, can contribute to placing these wines on the international stage.
The vineyard
Vassaltis’ vineyards are located on the island of Santorini, in the heart of the Santorini appellation. Santorini is a volcanic island characterised by its uniquely textured soil, composed of layers of volcanic ash, pumice, sand and basalt. The climate of the island varies between Mediterranean heat and typical desert-like conditions.
Vinification and ageing
The vinification process is carried out using typical white wine techniques. The whole bunches are pressed in stainless steel tanks with a controlled temperature and selected yeasts. Fermentation lasts 21 days. The wine remains on its lees and in a tank for 6 months.

The tasting
Nose
The aromatic bouquet reveals notes of flint, wet stone and sea salt combined with ripe yellow fruit, canned peaches, citrus and honey along with bread flavours, giving the ensemble a great complexity.
Palate
Assyrtiko 2020 is the embodiment of a wine with a beautiful acidity and a tremendous aromatic richness. The creamy texture blends with the mineral and saline character and the expression of ripe fruit. The long finish adds to the depth to this wine.
Food and wine pairing
Assyrtiko 2020 lends itself to seafood and raw or grilled fish.
Service and storage
Assyrtiko 2020 will reveal its full aromatic complexity until 2030. For an optimal tasting experience, serve between 10 and 11 degrees.
