Tasting
Color
The color reveals a ruby hue ranging from medium to dark.
Nose
Displaying great complexity, the nose harmoniously blends aromas of well-ripened red and black fruits, such as blueberry, cherry, blackcurrant, and blackberry. It then opens onto delicate floral notes of violet, enhanced by a distinctive minerality reminiscent of pencil lead and wet stone.
Palate
With a medium to full body, the palate stands out for its lovely liveliness and refreshing energy. The tannins, both fine and ripe, offer a soft, enveloping texture. The whole stretches into a long, persistent finish, echoing the black fruits and mineral touches perceived on the nose.
Food and wine pairing
This red wine pairs wonderfully with flavorful meats such as duck, goose, or feathered game. It also enhances roasted or grilled red meats, served with pepper sauces or reductions. For bolder pairings, it works perfectly with dishes featuring wild mushrooms, truffles, as well as aged hard cheeses.
Other characteristics
This dry wine has a moderate alcohol content of 12%, a total acidity of 3.68 g/l, and a pH of 3.40. It contains one gram per liter of residual sugar. It is also vegan certified, guaranteeing the absence of animal-derived products during its production.

The estate
Located in the Loire Valley in France, Château de Fosse-Sèche has winemaking origins dating back to the Middle Ages, under the impetus of Benedictine monks. Acquired in 1998 by the Pire family, the estate is now run by twin brothers Guillaume and Adrien Pire, joined by Guillaume Séché in 2025. The property spans forty-five hectares, of which only fifteen are devoted to vines, with the rest dedicated to preserving biodiversity. Certified organic and biodynamic, this innovative estate is also recognized as a bird sanctuary.
The vineyard
This Vin de France comes from an exceptional geological terroir located at the edge of the Brossay plateau, bordering the Saumur-Champigny appellation. Unlike the region's limestone soils, the roughly twenty-year-old vines thrive on Jurassic soil composed of flint, gravel, and clay, rich in iron oxide. Facing southwest and swept by cool winds, this vineyard benefits from an ideal microclimate. Yields are deliberately kept low to promote grape concentration.
The vintage
The year 2022 stands out as an exceptional vintage in the region. Mild, moderate, and steadily progressing weather conditions favored a regular growing cycle. This ideal weather allowed for slow ripening of the berries, resulting in perfect phenolic maturity of the grapes.
Winemaking and aging
The grapes intended for the "Laurasie" 2022 cuvée are hand-harvested with rigorous selection. In the cellar, fermentation begins spontaneously thanks to indigenous yeasts, at low temperature. The originality of the process lies in the use of porous concrete eggs, which promote natural micro-oxygenation and keep the fine lees in suspension. The wine is then aged on fine lees for about twelve months, with malolactic fermentation occurring naturally according to the characteristics of the year.
