Tasting Notes
Appearance
The colour reveals a brilliant pale straw yellow hue.
Nose
Complex and delicate, the nose exudes aromas of white flowers and acacia honey, intertwined with notes of ripe white and yellow fruits such as peach and quince. Subtle touches of citrus and flint round out this bouquet.
Palate
The palate seduces with its profile that is both full-bodied and finely chiselled. Powerful and incisive, it offers a refreshing acidity that carries fruity and mineral flavours. The whole stretches elegantly towards a saline finish of remarkable persistence.
Food and Wine Pairings
This gastronomic wine pairs wonderfully with umami-rich dishes such as mushroom ravioli with miso or a creamy truffled squash purée. It also enhances lamb shoulder with candied lemon, roast poultry with spices, as well as fine fish and grilled shellfish.
Serving and Cellaring
For optimal tasting, it is recommended to serve this Savennières 2023 at a temperature between 8 and 10°C. Built for ageing, it can be enjoyed now or cellared until around 2033.
A Savennières White Wine Combining Power and Minerality
The Estate
Located in Rochefort-sur-Loire, in the heart of the Anjou Noir in the Loire Valley, Château de Plaisance has belonged to the Rochais family since 1960. In 2019, winemaker Vanessa Cherruau took over the reins of this 25-hectare estate, becoming its majority shareholder in 2024. A true rarity, the vineyard is planted exclusively on cru terroirs. A pioneer in environmental stewardship, the estate has been certified organic since 1995 and biodynamic since 2008, combining rigorous agronomic standards with a comprehensive ecological vision.
The Vineyard
The grapes for this Savennières come from vines around 35 years old. They thrive on a distinctive terroir composed of wind-blown sands resting on a bedrock of schist and quartzite. The vineyard is managed with extreme rigour: ploughing has been completely halted, trees and hedgerows have been planted to encourage biodiversity, and plant-based herbal teas as well as biodynamic preparations are used to stimulate soil life.
Winemaking and Ageing
The grapes are hand-harvested in small crates to preserve the integrity of the berries. In the cellar, a slow, cold pressing is carried out, followed by fermentation triggered by indigenous yeasts. This Savennières 2023 is then entirely vinified and aged in barrels for 15 months. A partial malolactic fermentation is carried out to bring a subtle roundness while preserving the wine's natural tension.
