Description
Characteristics and tasting tips for Château Ormes de Pez 1998
Tasting
Nose
The aromatic bouquet reveals notes of ripe black fruit such as blackcurrant and blackberry, accompanied by hints of spice, leather and subtle oaky nuances.
Palate
This wine is fleshy, powerful and remarkably well balanced. The smooth, full-bodied attack gives way to tannins softened by time, stretching into a long, silky finish.
Food and wine pairing
This red wine pairs beautifully with characterful meats and fine poultry. It is an ideal match for Nantes duck, roast squab or a pan-seared rib of beef served with mushrooms.
The authentic expression of a Saint-Estèphe wine
The estate
The origins of Château Ormes de Pez date back to the mid-18th century, and the estate has long been firmly rooted in the winemaking landscape of Bordeaux. It takes its name from an ancient grove of elm trees and from the local word for peace. Owned by the Cazes family since 1940, the château is now run by Jean-Charles Cazes. Historically recognised as a Cru Bourgeois Exceptionnel, the estate combines tradition with technical innovation to produce harmonious wines, held to the same exacting quality standards as the family's other prestigious growths.
The vineyard
The estate covers 40 hectares in the northern part of the commune of Saint-Estèphe. The vines enjoy a temperate oceanic climate, moderated by the nearby Gironde estuary. The terroir is made up of two components: Garonne gravels rich in quartz and rounded pebbles, ideal for the Cabernets, and cooler clay-sand soils. The technical teams practise sustainable farming, supported by modern tools such as satellite imagery and a massal selection programme to preserve the vineyard's genetic heritage.
The vintage
The 1998 vintage was marked by particularly favourable weather conditions at the end of the growing season. A superb Indian summer, warm and sunny, extended the ripening period of the grapes, ensuring optimal health and a perfect balance between freshness and concentration.
Vinification and ageing
After hand harvesting, the grapes of Château Ormes de Pez 1998 are sorted and then placed in temperature-controlled stainless steel vats. Fermentation and maceration last around twenty days, punctuated by rack-and-returns and pump-overs for gentle extraction. The wine is then aged for 15 to 16 months in French oak barrels, 45% of which are new.
Grape varieties
This wine is a blend of Cabernet Sauvignon (54%), Merlot (37%), Cabernet Franc (7%) and Petit Verdot (2%).
