Tasting
Appearance
The colour reveals a deep garnet hue, enhanced by delicate violet highlights.
Nose
The nose offers a complex and elegant aromatic bouquet. It exudes scents of ripe black fruits such as blackberry, blackcurrant and cherry, harmoniously blended with notes of spice, liquorice and typical garrigue aromas.
Palate
From the very first sip, which is bold and direct, the wine reveals a beautiful volume infused with elegance. The palate is generous, supported by tannins that are fine, smooth and perfectly integrated, leading to a lingering finish on fruit and spice.
Food and Wine Pairing
This red wine pairs wonderfully with Mediterranean-inspired cuisine, such as herb-roasted lamb or oven-baked confit sun-drenched vegetables. It will also beautifully complement grilled red meats, slow-cooked dishes in sauce, as well as furred game or characterful poultry.
Serving and Cellaring
To fully enjoy this 2023 vintage, it is recommended to serve it at a temperature between 16 and 18°C. Opening the bottle a few hours in advance, or lightly decanting it while still young, will be beneficial. This wine, built to age, can be enjoyed from 2026, but will continue to evolve favourably in the cellar until around 2043.
The Elegance and Uniqueness of a Cult Wine from the Languedoc
The Estate
Founded in 1989 by the late Laurent Vaillé, Domaine de la Grange des Pères is located in Aniane, at the heart of the Languedoc. This cult estate, with a vineyard spanning around twelve hectares, quickly established itself as an essential reference thanks to its wines of rare elegance. Today, it is Bernard Vaillé, the founder's brother and current owner, who carries on this exceptional expertise. True to the estate's identity, he upholds environmentally respectful practices and bold blends, producing highly sought-after cuvées around the world.
The Vineyard
The vines behind this IGP Pays de l'Hérault thrive on the heights of the windswept Arboussas massif, at an altitude of between 250 and 300 metres. This terroir is characterised by a bedrock of lacustrine limestone covered with an abundance of pebbles and rocks. Surrounded by rich biodiversity of garrigue, white oaks and strawberry trees, the vineyard is farmed using uncertified organic and biodynamic methods, encouraging deep rooting and respect for natural balance.
Winemaking and Ageing
The making of this wine relies on a meticulous approach. The grapes undergo plot-by-plot vinification in stainless steel tanks, preserving the identity of each terroir before the final blend. The wine is then aged for around 24 months in barrels, a key stage that refines its structure and softens its tannins, giving it all its complexity.
