Tasting

Colour
The colour reveals a vivid purple-red hue, with lovely clarity and great brilliance.

Nose
Powerful and complex, the nose exudes a typically Mediterranean bouquet blending aromas of wild black fruit, black olive and garrigue. Subtle notes of liquorice, citrus, aniseed and spice enrich this aromatic palette.

Palate
The attack is bold and savoury, opening onto a refreshing palate that combines finesse and vivacity. The mid-palate reveals flavours of black olive and liquorice, underscored by peppery, spicy touches. Supported by fine, discreet tannins and a very light spritz, the finish stands out for its great gourmandise and lingering freshness.

Food and wine pairing

This red wine pairs beautifully with lamb skewers, moussaka or lasagne. It will also shine alongside roast duck, beef in sauce, grilled Mediterranean vegetables, or dishes featuring tapenade and black olives.

Service and storage

For optimal enjoyment, it is recommended to serve the "Tour de Pierres" 2024 at a temperature between 16 and 17°C. This wine can be cellared and enjoyed until around 2030.

The authentic expression of Pic Saint-Loup terroir

The estate

A former monastic estate whose winemaking origins date back to the Middle Ages, the property took a decisive turn in 1992. It was then that brothers Jean-Marc, Pierre and Xavier Ravaille, the current owners and heirs to a long line of winegrowers, decided to establish their own independent winery in the Languedoc, France. Pioneers in introducing the Syrah grape variety to the appellation, they farm this roughly forty-hectare vineyard using biodynamic and organic methods. Renamed Héritage du Pic Saint-Loup in 2023, the estate stands out for its polyculture philosophy, combining vines, olive trees and sheep farming.

The vineyard

Located in the commune of Saint-Mathieu-de-Tréviers, at the foot of the limestone mountain of Pic Saint-Loup, the vineyard benefits from a Mediterranean climate tempered by refreshing continental influences. The vines, averaging around fifty years of age, thrive on clay-limestone soils, red clay and gravelly ground on the lower slopes. This distinctive terroir, benefiting from generous rainfall and cool nights, allows for optimal grape ripening. The harvest is carried out by hand during the coolest hours of the morning.

Winemaking and aging

The "Tour de Pierres" 2024 cuvée undergoes traditional winemaking with precise temperature control and extended maceration to gently extract colour and aromas. The wine is then aged for twelve months, split between large wooden foudres and traditional barrels, refining the wine's structure while preserving the brightness of the fruit.
