Tasting
Appearance
The wine reveals a straw-yellow hue of pale to medium intensity, adorned with subtle green highlights. Its limpidity is brilliant, hinting at a beautiful texture in the glass.
Nose
The aromatic bouquet opens with a superb floral expression, blending acacia, honeysuckle and elderflower. It then evolves towards indulgent aromas of quince, underlined by a complex minerality evoking gunflint and wet stone.
Palate
On the palate, the wine offers a vibrant acidity typical of its terroir, perfectly balanced by a beautiful textural richness. Flavours of orchard fruits and stone fruits, dominated by quince, stretch into a lingering and deeply mineral finish.
Food and wine pairings
This white wine pairs wonderfully with a seafood platter (oysters, clams, mussels), delicate fish dishes or vegetarian dishes with fresh herbs. It will also enhance poultry served with a fruit reduction or a goat's cheese.

The estate
Stemming from a family that has been part of the wine world for four generations, the Pascal Jolivet House was officially founded in 1987 in the Loire Valley. Starting with an 8-hectare estate, the property now extends over 120 hectares spread across Sancerre, Pouilly-Fumé and Touraine. Still led by its founder and current owner, Pascal Jolivet, supported by oenologist Valentina Buoso, the estate has established itself as one of the youngest and most dynamic in the region. Featured on the finest Michelin-starred tables, it stands out for its specialisation around two grape varieties and its natural approach.
The vineyard
The vineyard comes from 20 hectares of vines located in Saint-Père, one of the finest terroirs of the Coteaux du Giennois appellation. Surrounded by natural grasses and flora, this Loire terroir rests on remarkable geological soils composed of limestone and flint, ideal for the flourishing of the vine.
Vinification and ageing
True to the estate's philosophy, "Édition N°3" 2024 undergoes an exclusively natural vinification. Fermentation takes place spontaneously, using only the indigenous yeasts present on the grapes and in the cellar, in order to preserve the authenticity of the terroir.
