Tasting

Colour
This wine displays a pale, bright and vibrant colour.

Nose
The aromatic bouquet opens with lovely notes of stone fruit, joined by wonderfully fresh citrus zest and lime, all delicately enhanced by a hint of sage.

Palate
On the palate, this wine is rich, concentrated and full of vitality. It offers a pleasant texture, carried by bright acidity and a wet-stone minerality. A saline touch elevates the whole, extending into a long, lingering finish.

Food and wine pairings
This cuvée will pair beautifully with seafood, grilled fish or white meat. It will also make an excellent companion to Asian dishes or goat's cheese.

Serving and cellaring
Klein Constantia "Metis" 2024 can be enjoyed now to appreciate its youthful character, but it also has fine ageing potential. It can therefore be laid down in the cellar and savoured until around 2034.

A unique expression of South Africa's Constantia terroir, inspired by Pascal Jolivet

The estate
The estate's story truly began in 1987, when Pascal Jolivet, the current owner, founded his own eponymous brand. Located in the heart of the Centre-Loire, the estate now covers 120 hectares spread between Sancerre and Pouilly-Fumé, complemented by a further 60 hectares in Touraine. Renowned for its minimalist, natural approach, the estate has embraced organic and biodynamic practices. Pascal Jolivet crafts terroir-driven wines of great purity, a philosophy that has travelled as far as South Africa through unique collaborations.

The vineyard
The grapes come from five plots located on the slopes above the famous Constantia vineyard in South Africa. This exceptional terroir benefits from a cooling maritime climate and soils of decomposed granite, which promote optimal ripening. The vines are carefully tended, combining organic, biodynamic and sustainable farming practices in order to preserve biodiversity and the authentic expression of the site.

Winemaking and ageing
To produce Klein Constantia "Metis" 2024, the grapes are harvested by hand early in the morning. The approach is designed to be as natural as possible. Fermentations begin spontaneously thanks to indigenous yeasts. At the end of this process, only the five best barrels are selected for the final blend. This Western Cape wine is then aged on its lees for twelve months in neutral 500-litre French oak barrels.
