Tasting Color
A clear, deep gold color with intense amber highlights, reflecting its long aging in bourbon barrels. Nose
Highly complex, the initial nose reveals dominant notes of nougat, almond paste, and marshmallow, underpinned by vanilla and caramel. Aeration unveils deeper layers of maple syrup, prune, toasted oak, coffee, and ripe banana, with a distinctive touch of struck match. Subtle aromas of tropical fruits, such as pineapple and peach, along with a hint of menthol, round out this bouquet. Palate
The attack is round and structured by well-toasted oak tannins, offering a pleasant spicy tension. The palate develops into a luscious sweetness of crème brûlée, caramel, and molasses, enhanced by touches of cinnamon and nutmeg. The texture is exceptionally smooth. The long, lingering finish oscillates between the sweetness of caramel and the dryness of lightly smoked oak, letting elegant notes of tobacco and bitter cocoa emerge. Pairings and tasting moments

To fully appreciate its complexity, this spirit is best enjoyed neat, at room temperature, in a tulip-shaped glass (snifter). It is recommended to let it breathe for about twenty minutes before tasting to release its most subtle aromas. Adding ice cubes is not advised, as the cold would mask its delicate fruity notes and accentuate the astringency of the wood.

Mixology

While it excels when enjoyed neat, this spirit also blends elegantly into cocktails that respect its balance. It elevates Daiquiri variations, where its vanilla sweetness contrasts with the acidity of lime, and expresses itself perfectly in a refreshing Rum Collins or Tiki-style preparations.

Bottled at 40% ABV in a classic 70cl format, this spirit was awarded a score of 87.1 at the prestigious International Sugarcane Spirit Awards in 2021.

A Saint Lucia Rum of great complexity born of historic craftsmanship

The heritage and excellence of Saint Lucia Distillers

Founded in 1972 through the merger of the island's last two distilleries, Saint Lucia Distillers carries on a centuries-old tradition in the picturesque Roseau Valley. This producer crafts every Rum from Saint Lucia with rare rigor, embodied by the Admiral Rodney brand, a true tribute to the famous 18th-century British admiral. The distillery's identity is built on the use of a traditional double-column Coffey still, installed in 1985, enabling the extraction of heavy, aroma-rich distillates. Combining heritage preservation with environmental awareness, the estate is now managed by Margaret Monplaisir and has belonged, since 2016, to the Groupe Bernard Hayot (GBH). This pursuit of excellence was crowned in January 2025 with the granting of a Geographic Indication, thus protecting the authenticity of these exceptional spirits.

HMS Royal Oak: The archetype of traditional blending

Made exclusively from Bonsucro-certified molasses, the HMS Royal Oak is an amber Rum that showcases the technical mastery behind its production. Fermentation relies on an exclusive yeast strain, isolated directly from the estate's sugarcane fields, and takes place in open-air concrete vats.

The uniqueness of this Rum lies in its distillation process. Unlike industry standards, the distillate is drawn off from the lower plates (30, 32, and 40) of the double-column Coffey still. This counter-current method captures a heavier spirit, rich in esters and congeners, delivering remarkable aromatic complexity.

The blend, meticulously orchestrated by the cellar master, brings together eaux-de-vie aged between seven and twelve years. This maturation takes place exclusively in American white oak barrels that previously held bourbon. The tropical climate of the Roseau Valley accelerates this aging process, promoting optimal extraction of the wood's compounds. Launched in 2019 to succeed the former "Extra Old" designation, this cuvée takes its name from the famous 74-gun ship that took part in the Battle of the Saintes, firmly anchoring this spirit in the rich naval history of the Caribbean.
