Tasting

Appearance
A bright, radiant amber hue. Visually vibrant, this spirit shows great clarity along with thick, slow legs, a testament to the viscosity and aromatic concentration gained over its 42 years of ageing.

Nose
The bouquet evolves remarkably in the glass. It opens with a gentle sweetness of ripe fruit, honey and vanilla, before shifting towards a drier, more herbaceous register of thyme, heather and hay. A discreet yet persistent wood smoke, reminiscent of a distant campfire, weaves through subtle citrus aromas (lemon zest, grapefruit, orange) and a delicate hint of sea salt.

Palate
The attack is generous and indulgent, revealing luscious notes of tropical fruit (mango, papaya) and grilled pineapple, carried by the vanilla sweetness of the oak. The peat forms an elegant backbone, expressed through warm wood smoke and fine touches of bacon, without ever overwhelming the palate. Maritime notes of salt and dried seaweed complete this rich, silky texture. The finish is long, delicate and wonderfully smooth, leaving a lingering trail of smoke and herbs, with a final touch of salinity.

Pairings and tasting occasions
This exceptional spirit calls for contemplative sipping, ideally late in the evening, served in a tulip glass or copita at 18–20°C. It is best enjoyed neat, although a few drops of water can further reveal its herbaceous and maritime nuances. As for food, it pairs beautifully with caramelised tropical fruit desserts (roast pineapple, citrus tart), aged hard cheeses (Cheddar, Comté, Gouda), delicate smoked fish or fine dark chocolate with 60–70% cocoa.

Mixology
While its aromatic profile could in theory inspire high-end creations such as an Old Fashioned or a Rob Roy, this exceptionally rare spirit is above all meant to be savoured unadorned. Enjoying it neat is highly recommended to fully appreciate its historical and aromatic complexity.

Other characteristics
This spirit is a delicately peated Island Blended Malt. The smoke is fine, woody and perfectly controlled, acting as a background thread rather than a dominant force. It is bottled at 46.5% vol.
