Tasting

Color
A warm golden-brown hue with amber highlights, showing a beautiful viscosity that reveals delicate legs on the sides of the glass. A natural color, achieved without any addition of caramel.

Nose
The first nose reveals a lush dominance of ripe banana and tropical fruits, wrapped in vanilla, caramel and subtle sweet spices. With aeration, the profile is enriched with dried fruits such as raisin and prune, floral touches and an iodine and saline note so characteristic of its maritime terroir.

Palate
The attack is smooth and suave, with no alcoholic burn. A roundness coats the palate with flavors of vanilla and caramel, before evolving into a more complex structure blending spicy notes of pepper and ginger, citrus zest and a subtle oakiness. The finish, of a beautiful length, lingers on vanilla sweetness, spices, a fine woody dryness and a persistent iodine touch.

Pairings and Tasting Moments
Perfect as an elegant digestif to end a meal, this spirit pairs beautifully with a chocolate fondant. The notes of vanilla and citrus contrast with the intensity of the cocoa while balancing its tannins. Best enjoyed slightly chilled (without ice) to allow its full aromatic palette to express itself.

Mixology
Although the house recommends enjoying it neat to fully appreciate its complexity, it also lends itself well to crafting sophisticated cocktails such as the Sazerac, or simple pairings with a premium tonic or a quality ginger beer.

The Meticulous Craftsmanship of the Isautier 10 Years Old Aged Rum
This exceptional aged rum illustrates the distillery's technical mastery. The 10 Years Old is the result of a bold and complex blend between an agricultural rum, made from pure sugarcane juice bringing freshness and fruity notes, and a traditional molasses rum, lending depth and richness.

Column distilled, this Rum benefits from a tropical ageing process accelerated by the island's constant heat and humidity. The maturation spans a full decade and follows a rigorous two-stage protocol. The spirit first rests in new fine-grain French oak casks, which impart its primary aromas of vanilla and spices. It is then transferred to older oak casks, known as "fûts roux", allowing for slow oxidation and refinement of its structure without masking the delicate notes of the cane.

Presented in the iconic triangular bottle created in 1910, this spirit has received numerous international awards, notably a Silver Medal at the Spirits Selection of the Concours Mondial de Bruxelles in 2025.
