Tasting
Color
With a rich amber hue reminiscent of burnished mahogany or polished gold, this spirit draws its 100% natural colour from its ageing in casks. In the glass, it displays a beautiful viscosity, with slow-forming legs that reveal its concentration and full-bodied texture.
Nose
The aromatic bouquet is complex and inviting. It opens with dominant notes of vanilla, honey and citrus (lemon and orange zest), rounded out by dried fruit from the sherry influence. With aeration, notes of cinnamon, nutmeg, toasted oak and fresh fruit such as apple and pear emerge, offering a balanced and approachable profile, free from any aggressive alcoholic heat.
Palate
The palate opens silkily, marked by sweet flavours of fruit, honey and orange marmalade. The mid-palate develops into a lovely complexity, blending dried fruit (raisins, plums), caramel, butter and vanilla pod. The texture is creamy and full, supported by gentle spices such as ginger and cinnamon. The finish, of medium to long length, extends the experience with warm notes of woody spice, honeyed fruit and a subtle smoky sweetness.
Food Pairing Tips and Moments of Enjoyment
Perfect as an after-dinner spirit, it pairs beautifully with mature cheeses such as Gruyère, pressed alpine-style cheeses, or melted raclette and asiago. Its notes of vanilla and citrus also create a lovely affinity with caramel and vanilla desserts, as well as dried fruit and nuts.
Mixology

This spirit has an alcohol content of 43%. It stands out for its entirely natural colour, derived exclusively from the interaction between the distillate and the wood during maturation. Its aromatic profile also reveals a very subtle note of smoke, delicately woven throughout.

The Art of Maturation Behind the Double Cask 15 Years Old
This exceptional Single Malt showcases the distillery's absolute mastery of wood management. The production of this Whisky begins with a rigorous selection of barley, including around 25% of the historic Golden Promise variety, which lends the distillate its rich, oily character.
At the heart of the Double Cask 15 Years Old's identity lies its dual maturation process. It is aged for fifteen years in a combination of American and European oak casks. These casks are naturally air-dried before being carefully toasted, then seasoned with Oloroso sherry in the Jerez region of Spain for twelve to eighteen months. American oak imparts bright notes of vanilla and citrus, while European oak lends structure with rich aromas of dried fruit and spice.
Finally, since 2025, this bottle has featured redesigned packaging by designer David Carson. The triangular label pays tribute to the famous Sherry Triangle in Spain, highlighting the importance of this influence on the spirit's profile. The bottle also incorporates advanced anti-counterfeiting technology and QR codes, guaranteeing the authenticity of this highly prized expression among enthusiasts.
