Tasting
Color
A deep ruby hue, ranging from golden amber to dark mahogany, achieved solely through interaction with the oak casks during maturation.
Nose
A sophisticated bouquet dominated by dried fruit aromas such as dried orange slices, raisins, sultanas and apricot. These fruity notes intertwine with ginger syrup, oak and subtle spices. Adding a drop of water reveals delicate hints of vanilla and honey.
Palate
A full, viscous and luxurious texture. The palate confirms the richness of the nose with an abundance of dried fruit, black cherries and chocolate, enhanced by crystallized ginger and toasted almonds. The attack shows a certain dryness with a spicy, woody character. The finish is remarkably long, with lingering notes of dried fruit, dark chocolate and oak.
Food Pairing Tips and Moments of Enjoyment
This exceptional spirit calls for contemplation and is best enjoyed at the end of a meal. It pairs beautifully with desserts such as dark chocolate with a minimum of 70% cocoa or a crème brûlée, whose texture and caramelized notes echo those of the whisky. On the savory side, it enhances blue cheeses (Roquefort, Stilton) or a marbled grilled meat such as a rib-eye steak or Wagyu beef. To fully appreciate its complexity, it is recommended to serve it at room temperature in a tulip or copita glass.
Mixology
Given the prestige and complexity of this product, it is strongly recommended to enjoy it neat, without ice, so as not to alter its aromas. Adding a small splash of room-temperature water is nonetheless possible to release additional volatile compounds.

The Meticulous Craftsmanship of the Sherry Oak 25 Years Old Annual Release 2023
The Sherry Oak 25 Years Old Annual Release 2023 is the flagship expression of the distillery's annual range. This Whisky is a Single Malt crafted from a rigorously selected barley, composed of approximately 20% Minstrel variety and 80% Concerto. After traditional malting and meticulous fermentation, the distillate is obtained using the house's characteristic small stills. Only an extremely selective "heart of the cut," representing barely 16% of the total distillate, is retained for maturation.
This spirit has matured peacefully for a quarter of a century, exclusively in carefully selected American oak casks previously seasoned with sherry in the Jerez region of Spain. This complete mastery of the wood supply chain guarantees exceptional quality and aromatic complexity.
Although this is an annual edition with controlled production, this release features a modernized presentation. Its bottle bears an iconic triangular label evoking Spain's "Sherry Triangle," complemented by anti-counterfeiting technology and a QR code for optimal traceability, reflecting the luxury status and strong desirability of this bottle among connoisseurs and collectors.
