Appearance

Dock 1 displays a golden hue with sapphire-yellow highlights, bright and traced with oily legs that speak to its aromatic richness.

Nose

The nose reveals cereal and woody notes, accompanied by yellow stone fruits such as mirabelle plum. Aromas of caramel and cinnamon add a rich, spicy dimension.

Palate

The attack is warm and spicy, lively, then softened by a lovely roundness. Flavors of quince, cinnamon and caramel unfold with a beautifully long finish.

Food pairings and tasting moments

This whisky pairs perfectly with duck breast with foie gras or toast with Beaufort and figs. These combinations highlight its spicy structure and fruity indulgence.

This unpeated single malt is bottled at 45.8% and has not undergone any chill filtration. Its color is natural, preserving the full range of aromas developed during aging.

Founded in September 2017 by Jean-Philippe Ballanger and Yves Médina, Moon Harbour has established itself as Bordeaux’s first whisky distillery. Housed in a World War II bunker at the Bassins à flots, it benefits from exceptional conditions for aging. Moon Harbour favors a 100% local approach: barley from Gironde, Stupfler stills from Bordeaux, and grand cru casks. The distillery stands out for its bold creations, notably Dock 3, the first single malt smoked with seaweed from Arcachon. Owned by its two passionate founders, Moon Harbour brilliantly showcases the Bordeaux terroir through distinctive, innovative spirits.

Dock 1 Single Malt Double Cask Château Rieussec Finish: Bordeaux craftsmanship applied to whisky at its finest

This 100% Made in Bordeaux spirit is produced from barley grown in the Gironde area, mashed, fermented and distilled at the Moon Harbour distillery in a locally made still. Its 5-year aging takes place in two stages: 4.5 years in Sauternes casks, followed by 6 months of finishing in Château Rieussec barrels, a Sauternes Premier Cru Classé. This double maturation gives Dock 1 a unique personality, combining the whisky’s cereal structure with the indulgent, fruity notes inherited from these prestigious sweet-wine casks. Bottled in 70 cl and presented in a case, this whisky is also available in a version finished in Château Carbonnieux casks (Pessac-Léognan).
