Tasting

Color
A deep amber hue with mahogany and caramel highlights, this cuvée reflects an intense interaction with charred oak. Its moderate viscosity reveals a naturally tannic structure, with no added sugar.

Nose
The initial nose is dominated by intense empyreumatic notes of roasted coffee beans, cocoa powder and lightly burnt caramel. It then opens onto softer, more indulgent aromas of tropical fruit compote (dried apricot, peach), subtle citrus (orange, lime zest) and buttery vanilla. A mineral and vegetal thread of fresh sugarcane anchors this profile, elegantly enhanced by warm spices such as cinnamon, nutmeg, white pepper and clove.

Palate
The attack is warm, with perfectly integrated alcohol and no aggressive burn. The mid-palate confirms the roasted notes from the nose, supported by firm tannins. As it evolves, the sweetness of the tropical fruit and the vegetal liveliness of the cane emerge, creating a dynamic balance between the distillate and the wood. The finish lingers, marked by warm spices, toasted wood and a subtle freshness of cane that avoids any heaviness.

Pairings and Tasting Moments
Ideal as a digestif after a rich meal, this spirit is best enjoyed neat, at room temperature or with a minimal amount of ice, taking the time to let it evolve in the glass. It pairs beautifully with dark chocolate, caramelized nuts, dried fruits such as mango or papaya, spiced pastries and Latin American cuisine.

Mixology
Although it fully expresses itself when enjoyed neat, its structure and aromatic intensity elevate spirit-forward cocktails. It excels in stirred preparations with spiced bitters and a dash of dry vermouth, in complex punches with warm spices, or in a sophisticated Daiquiri, where its woody and spicy notes add a rich, textured dimension.

Neisson Distillery: The Excellence of Martinican Terroir
Founded in 1931 in Le Carbet by brothers Adrien and Jean Neisson, this family-run distillery is a true institution of Rhum de la Martinique. Equipped since 1952 with its legendary copper Savalle column still, Neisson has distinguished itself through a visionary approach that combines respect for its volcanic terroir with technical innovation. A pioneer of organic farming, the estate now cultivates 49 hectares of sugarcane without any burning. Awarded the Living Heritage Company (Entreprise du Patrimoine Vivant) label in 2018, the distillery is currently run by Claudine Neisson-Vernant and her son Grégory Vernant-Neisson. Together, they carry on a tradition of excellence, favoring long fermentations with indigenous yeasts to produce spirits of remarkable aromatic complexity, all while fiercely defending their production facilities and land against the pressures of local urbanization.

Innovation Through Bousinage: The Secrets of Profil 107
Profil 107 illustrates the distillery's innovative approach to aging. This Rhum Agricole AOC Martinique is distilled from pure sugarcane juice at 73%, then reduced with purified water. Its production relies on a two-stage maturation method, devised by cellar master Alex Bobi and Grégory Vernant-Neisson, to ensure a reproducible, documented aromatic signature.

The white distillate first rests for approximately 14 months in 190-liter ex-bourbon barrels, allowing for a delicate initial contact with the wood. The true singularity of this amber Rhum lies in its second maturation phase: the spirit is transferred into ten new 225-liter French oak barrels that have undergone a specific char, numbered "107".

This high-temperature bousinage, notably more intense than that of Profil 105, extracts deeply toasted, empyreumatic aromatic compounds. Bottled at the Thieubert estate, this rum breaks free from traditional aging standards to offer a complexity worthy of far older spirits, all while preserving the vegetal identity of sugarcane.
