Tasting
Appearance
This wine reveals a relatively pale colour for its appellation, leaning towards a luminous ruby or a translucent garnet.
Nose
The aromatic bouquet opens with scents of fresh red fruits such as raspberry, cherry and wild strawberry. It is enhanced by floral nuances reminiscent of violet and rose, intertwined with Mediterranean herbs, sweet spices and a pronounced chalky minerality.
Palate
The texture is both concentrated and airy, supported by tannins of remarkable finesse, almost powdery. The lively acidity brings beautiful tension and a sense of verticality, leading into a long, persistent finish on fruit, flowers and a delicate saline touch.
Food and wine pairings
This delicately crafted cuvée pairs beautifully with tender roasted meats such as a herb-crusted rack of lamb or noble poultry like pigeon or duck. It also enhances Mediterranean dishes featuring slow-cooked vegetables, as well as classic fare such as a fillet of veal with mushrooms.
Serving and cellaring
To fully appreciate Les Manyes 2023, serving between 15 and 17 degrees is recommended, ideally in a Burgundy-style glass. A gentle decanting of thirty to sixty minutes will help reveal its full complexity. With its fine acidity, this wine displays an excellent ageing potential.
The elegance of a great high-altitude cru in Priorat by Terroir al Límit
The estate
Founded in 2001, the Terroir al Límit estate stretches across a 25-hectare vineyard in the heart of Catalonia. Today, owners Dominik Huber and Jaume Sabaté manage this property, which has become an essential benchmark. The estate stands out for its approach inspired by Burgundian traditions, favouring finesse over power. Certified organic and applying biodynamic principles, the estate crafts terroir-driven wines of great purity, faithfully reflecting the rugged landscapes and Mediterranean climate of the region.
The vineyard
Located in Cabacés, within the Montsant Natural Park in the Priorat, the vines benefit from a remarkable altitude of 800 metres. Facing west, these plots are home to 60-year-old vines. Unlike the traditional schist soils of the region, the soils here are composed of red clay and gypsum, lending the wine its distinctive mineral profile.
Winemaking and aging
The production of Les Manyes 2023 relies on entirely manual harvesting. The whole bunches ferment with indigenous yeasts in concrete vats, with no punching down or pumping over, in order to favour a gentle infusion. After pressing mid-fermentation, the wine is aged for 8 months in concrete vats, thus preserving the brightness of the fruit and the authentic expression of the terroir without the influence of new oak.
