Colour
This white wine reveals a brilliant pale straw hue, highlighted by beautiful brightness and remarkable visual freshness.
Nose
The aromatic bouquet opens with lovely intensity, releasing citrus notes such as grapefruit, mingled with floral hints of linden blossom and herbaceous touches reminiscent of mint. Subtle nuances of exotic fruit intertwine with a pronounced stony minerality, occasionally enhanced by delicate smoky and spicy notes.
Palate
The attack is both crisp and velvety, introducing a palate where the concentration of fruity aromas is perfectly balanced by a refreshing liveliness. This cuvée offers a lush texture sustained by fine tension, extending into a persistent, pure and precise finish, guided by a mineral backbone and light spicy notes.
Food and wine pairing
This wine pairs wonderfully with seafood such as line-caught sea bass, sea bream or scallops. It also enhances free-range poultry in cream sauce, smoked salmon terrine, grilled summer vegetables, or a soft-ripened cheese such as Brillat-Savarin.
Service and storage
To fully appreciate the "Le Clos du Moulin" 2024 cuvée, it is recommended to serve it at a temperature between 10 and 12°C, after letting it rest for a few moments once removed from the refrigerator. This wine can be enjoyed from 2025 and will continue to evolve favourably in the cellar until around 2030.

The estate
Founded in 1850 by the Duveau family, the estate was taken over in 1991 by Thierry Germain and his wife Marie. Located in Varrains, at the heart of the wine-growing region, the property today spans 28 hectares. Under the guidance of its current owner, Thierry Germain - Domaine des Roches Neuves has become a true benchmark for biodynamic viticulture. Working the soil with draft animals and a rigorous plot-by-plot approach illustrate the philosophy of this winemaker, who has been awarded the highest accolades for the consistent quality of his cuvées.
The vineyard
Hailing from the Saumur appellation, this cuvée comes from an exceptional plot of about one hectare located in the commune of Parnay. The very old vines, averaging 80 years of age, thrive on a shallow terroir made up of clay-sand soils resting on a Senonian limestone bedrock. This distinctive geology gives the grapes a unique structure and minerality.
Winemaking and aging
After manual harvesting, the grapes destined for "Le Clos du Moulin" 2024 undergo gentle pneumatic pressing lasting four hours. Alcoholic fermentation then takes place over three months in 600-litre barrels of a wine. Finally, the wine undergoes aging on fine lees for eight to nine months, fostering the development of its aromatic complexity and texture.
