Characteristics and Tasting Tips for the Bourgogne Chardonnay 2025 by Albert Morot
Tasting notes
Colour
The colour is a pale, brilliant yellow with golden highlights that reveal the fine ripeness of the grapes.
Nose
The nose opens with delicate aromas of white flowers, underpinned by a mineral touch and subtle, lightly toasted notes, with hints of white-fleshed fruit emerging in the background.
Palate
On the palate, this wine is lively and precise, offering a fine balance between mineral tension and roundness, carried by a dense texture inherited from mature vines.
Food and Wine Pairing
This Bourgogne Chardonnay will pair beautifully with an aperitif among friends, fish and seafood, as well as shellfish, whose delicacy it highlights. It is also an excellent match for white meats in creamy sauces and mushroom-based dishes, as well as fresh vegetable dishes and a wide selection of cheeses.
The Precision and Structure of a White Burgundy Wine
The Estate
Founded in 1820 in Beaune, in Burgundy, Albert Morot has built its reputation around a remarkable collection of premiers crus, which have been run as a fully fledged wine estate since 1984 and farmed organically since 2015. Based at the Château de la Creusotte, the estate now belongs to Sophie Desmazières-Poitrinal and Guillaume Poitrinal, who entrusted the management of the vineyard to Pierre-Jean Villa in 2023, continuing a demanding family legacy.
The Vineyard
This Bourgogne Chardonnay comes from parcels in the south of the Côte de Beaune, planted on clay-limestone marl soils and facing east-southeast, at an altitude of between 320 and 400 metres. The vines, trained in Guyot and planted at a density of 10,000 vines per hectare, have an average age of around forty years, a guarantee of concentrated and complex fruit.
Vinification and Ageing
For this Bourgogne Chardonnay 2025, the whole harvest is pressed and settled before being transferred to 350- and 400-litre French oak barrels, where fermentation takes place with indigenous yeasts, supplemented with lees stirring if needed. Ageing continues for twelve months in barrel, followed by six months in stainless steel tank, with a slow malolactic fermentation and no racking. Bottling is carried out by gravity, without fining or filtration.
