Decanter

Bright, a touch of sherbet, orange rind, milk chocolate, raspberry and cranberry. Super fresh and vibrant. Clean and chiselled, this is well built with freshness and crispness. It starts off well but builds to a chalky mid-palate that stops, tightens and tapers a little. Really fresh, cool mint, clove, liquorice. A touch tense on the finish, but there’s detail and such precision. You can feel the Cabernet Franc playing its part. Well built for sure, less approachable than some, but it has a good outline. A serious second wine. Ageing: 50% new oak, 50% one-year-old barrels. Yield of 22.24 hl/ha. pH 3.55.

A Second Wine from Saint-Émilion combining finesse and complexity

The property

The origin of the property is very ancient. The vines have been cultivated on the slopes of what is today the Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1st Grand Cru Classé "A", possesses one of the most beautiful terroirs of Saint-Émilion. Château Pavie is recognized for the structure and elegance of its wines.

Arômes de Pavie became from 2005 the label of the second wine of Château Pavie, succeeding that of Château Tour Simard.

The vineyard

Arômes de Pavie 2024 is the Second Wine of this iconic property of Saint-Émilion, made from vines averaging 31 years old located southeast of the Saint-Émilion hill. This 13.5-hectare vineyard is planted on the "plateau" composed of a clay-limestone soil above the asteriated limestone. Particular attention is paid to the vineyard: pruning, green harvesting and leaf thinning vary according to the age of the vines.

Vinification and aging

Manual harvest with sorting. Vinification in thermoregulated wooden vats. The malolactic fermentation takes place in barrels just like the aging, with 50% new barrels and 50% barrels of one wine.

Blend

Arômes de Pavie 2024 is the result of a blend of merlot (50%) and cabernet franc (50%).
