Appearance
The Prestige Blanc de Blancs Diebolt-Vallois shows a very clear, pale gold colour with soft green highlights, animated by a fine, steady stream of bubbles that bears witness to careful ageing.
Nose
The nose is intensely aromatic, blending fresh citrus, white flowers and stone fruit over a backdrop of chalky minerality that immediately evokes the wine's origins in the terroirs of the Côte des Blancs.
Palate
On the palate, the wine unfolds a texture that is both creamy and taut, carried by vibrant acidity and a saline thread, before finishing on a long, lemony and chalky persistence that marks the precision of this cuvée.

A Chalky Blanc de Blancs Born of the Grands Crus of the Côte des Blancs, the Signature of Diebolt-Vallois
The Estate
Born in the late 1950s from the union of Jacques Diebolt and Nadia Vallois, the House of Diebolt-Vallois is now based in Cramant, in the heart of the Côte des Blancs in Champagne. Run since 2016 by the third generation, Ophélie and Philippine, it remains a modest-sized family house, renowned for its exclusive focus on Chardonnay and for its perpetual reserve kept in oak foudres since 2009, a hallmark of its cuvées.
The Vineyard
The Champagne vineyard that gives rise to this cuvée draws on the Grands Crus of the Côte des Blancs, in Cramant, Chouilly, Oger and Le Mesnil-sur-Oger. The soils consist of a thin layer of topsoil resting on a chalk bedrock, while the parcels most often enjoy an east-southeast exposure, conducive to the slow ripening of Chardonnay. The vineyard is managed according to sustainable viticulture, with hand harvesting carried out parcel by parcel.
The Blend
This Blanc de Blancs combines a base wine from a recent harvest with reserve wines from several earlier years, complemented by a perpetual reserve aged in large oak foudres since 2009. This multi-vintage architecture brings together the freshness of a recent harvest and the depth provided by older wines, ensuring a consistent style from one bottling to the next.
Vinification and Ageing
The entirely hand-picked harvest is pressed parcel by parcel, and only the cuvée from the first pressing is retained for the Prestige Blanc de Blancs Diebolt-Vallois. The juices are vinified in temperature-controlled stainless steel tanks, while the reserve wines are aged in large oak foudres. Malolactic fermentation is carried out on all of the base wines, lending roundness and balance to the acid structure of the Chardonnay. After the secondary fermentation, the wine rests for several years in bottle in cellars dug directly into the chalk of Cramant, before being disgorged and dosed in the Extra Brut style.
