Tasting

Appearance
The wine displays a pale, luminous pink hue with delicate highlights reminiscent of vine peach.

Nose
The nose opens with floral notes of linden and jasmine, accompanied by aromas of ripe red berries and peach. Hints of watermelon and exotic fruits complete this elegant bouquet, enhanced by a distinctive minerality.

Palate
On the palate, this rosé charms with its vibrant freshness and energy. The clean attack reveals tangy red fruit and citrus notes, supported by a light tannic structure that lends density and definition to the wine. The finish stands out for its remarkable length and a slight mineral bitterness characteristic of the terroir.

Food and wine pairings

An elegant Provençal rosé by Château d'Estoublon

The estate
Founded in 1489, the Château d'Estoublon spans three hundred hectares in the heart of the Alpilles, in Fontvieille, Provence. Certified organic since 2002 and currently undergoing biodynamic conversion, the estate is led by Stéphane Courbit, majority shareholder, alongside Nicolas Sarkozy and Carla Bruni, co-owners. Under the strategic direction of Jean-Guillaume Prats and the technical management of Victor Joyeux, this historic property combines excellence in both viticulture and olive growing. A member of the Comité Colbert since 2021, Château d'Estoublon embodies the prestige of Provençal winemaking.

The vineyard
This rosé wine from Baux de Provence comes from a vineyard of seventeen to twenty hectares cultivated organically. The vines benefit from an exceptional terroir composed of clay-limestone and sandy-silty soils enriched with gravel and flint, ensuring optimal drainage. The Mediterranean climate, characterized by more than 2,800 hours of sunshine per year and the beneficial influence of the mistral, promotes balanced ripening of the grapes. The estate’s average altitude is around one hundred meters, creating ideal conditions for the expression of Provençal grape varieties.

The vintage
The 2025 vintage is marked by remarkably early harvesting. The season began with a very rainy spring, requiring considerable work to preserve the vineyard’s health. Summer conditions then allowed for favorable ripening of the grapes, resulting in a vintage recognized for its quality and elegance.

Winemaking and aging
The grapes for Château d'Estoublon 2025 are harvested by hand with rigorous parcel selection. Whole-cluster pressing is carried out gently, followed by cold static settling. Alcoholic fermentation takes place in stainless steel and concrete vats at controlled temperatures between 18 and 20°C. Post-fermentation aging is conducted in stainless steel and concrete vats with fine lees contact for several weeks, preserving the wine’s aromatic freshness.
