Tasting Notes
Colour
The colour of this white wine reveals a brilliant deep gold hue, evolving over time towards deep amber highlights.
Nose
Wonderfully complex, the aromatic bouquet reveals intense scents of candied fruit, apricot and blood orange, intertwined with delicate notes of white flowers. With age, subtle touches of honey, sweet spices and toasted bread come to enrich this olfactory palette.
Palate
Full-bodied and unctuous, the palate offers a remarkably creamy texture, perfectly balanced by lovely acidic tension. The finish, wonderfully persistent, unfolds delicious fruity, floral and spicy notes.
Food and Wine Pairing
This sweet wine pairs beautifully with pan-seared foie gras, blue cheeses such as Roquefort, or fruit tarts. It also boldly complements spicy Asian cuisine, spice-roasted poultry or scallops with citrus.
Serving and Cellaring
For optimal enjoyment, it is recommended to serve Château de Fargues 2000 at a temperature of around 12°C. A light airing is sufficient, with no need for decanting. With remarkable ageing potential, this vintage can be cellared for several decades, and may even span the century.
A Sauternes Wine Combining Elegance and Richness
The Estate
Built at the beginning of the 14th century, the fortress of Château de Fargues has belonged to the Lur Saluces family since 1472. Located in Bordeaux, the estate produced its first Sauternes vintage in 1943. Now run by Alexandre, Philippe and Charlotte de Lur Saluces, the 170-hectare property stands out for its polyculture and demanding pursuit of quality. Although unclassified in 1855, Château de Fargues is unanimously recognised as one of the most prestigious references of its appellation.
The Vineyard
Overlooking the Garonne valley, the vineyard spreads over the hills of the Sauternes appellation. The vines, averaging 35 to 40 years old, thrive on poor soils composed of clay-limestone, gravel and sand, resting on a clay subsoil. This unique terroir benefits from an ideal autumn microclimate, where the alternation of morning mists and sunny afternoons favours the development of noble rot, Botrytis Cinerea. The estate practises sustainable farming, with annual ploughing and extremely limited yields.
The Vintage
The year 2000 offered very favourable climatic conditions for producing sweet wines. The weather allowed for excellent development of Botrytis Cinerea as well as optimal ripening of the berries, ensuring a healthy and concentrated harvest.
Winemaking and Ageing
The grapes for Château de Fargues 2000 are hand-harvested through successive selective picking passes, allowing botrytised grapes to be selected berry by berry. After a partial fermentation lasting three to five weeks, the wine is aged in French oak barrels, around 30% of which are new, for a period of 18 to 36 months. The wine is regularly racked and stabilised naturally, without any fining or filtration, in order to preserve its full purity.
