Ample and dense, the palate reveals a medium body supported by tannins that are both spirited and elegant. The wine shows a certain linearity, ending on a slightly tight finish.

This wine is an ideal match for roast or grilled red meats, such as rack of lamb or rib of beef. It also complements slow-cooked dishes, game in sauce and aged hard cheeses such as Comté or Cantal.
Serving and ageing

The elegance and structure of a Pauillac wine
The estate
Heir to a historic terroir in the Bordeaux region, Château Haut-Batailley was officially established in 1942 following the division of the original Batailley estate. Long run by the Borie family, this Bordeaux property was acquired by the Cazes family in 2017. Today, under the leadership of Jean-Charles Cazes, the estate continues to develop. Recognisable by its famous Tour l'Aspic, the vineyard now covers 41 hectares and stands out for its recent commitment to biodiversity.
The vineyard
Located at the southern entrance to the Pauillac appellation, on the border with Saint-Julien, the terroir lies on deep Garonne gravels over a subsoil of sand and clay. This location lends the wines a certain elegance. The estate places particular importance on its environment, incorporating agroforestry principles to preserve local biodiversity. The grapes are harvested by hand and, remarkably, the harvest has been carried out by the same families of Andalusian pickers for more than fifty years.
Winemaking and ageing
The production of Château Haut-Batailley 1999 was completed with barrel ageing, refining its structure and developing its aromatic range.
Grape varieties
This wine is a blend of Cabernet Sauvignon (70%), Merlot (25%) and Cabernet Franc (5%).
