The Structure and Refinement of a Haut-Médoc Second Wine
The estate
Château Pierbone is the second wine of Château Peyrabon. Located in the Haut-Médoc appellation, on the doorstep of Pauillac, Château Peyrabon is nestled in a truly verdant setting. Owned by Patrick Bernard since 1998, Château Peyrabon has undergone extensive restructuring and modernisation, both in the vineyard and in the cellar. This outstanding Haut-Médoc estate produces wines that are true to their appellation, combining elegance and power, with superb ageing potential.
The vineyard
In the commune of Saint-Sauveur Médoc, the Château Peyrabon vineyard covers around 37 hectares of vines with an average age of 25 years, planted on sandy gravel over a clay subsoil. Clay-limestone soils are found on 5 hectares of the vineyard. The vineyard holds ISO14001-2015 and HVE (High Environmental Value) certification, with crop protection carried out using sustainable, integrated practices.
Vinification and ageing
After rigorous sorting, the grapes are vinified plot by plot in temperature-controlled concrete and stainless steel vats. Fermentation, carried out at around 25 to 26°C, is accompanied by gentle extraction through carefully adapted pumping-over and rack-and-return. Maceration lasts 19 to 24 days. Vertical pressing ensures gradual extraction. The press wine is systematically kept separate, before the lots to be included in the blend are selected by tasting. The wine is aged in concrete vats.
Blend
This Château Pierbone 2015 is a blend of Cabernet Sauvignon (60%), Merlot (30%), Cabernet Franc (6.5%) and Petit Verdot (3.5%).
