The balanced and elegant aromatic palette of a Saint-Emilion red wine by Clos des Jacobins
The estate
The prestigious Clos des Jacobins from the Saint-Émilion appellation is named after the Benedictine preaching monks who welcomed pilgrims on the roads of St-Jacques de Compestelle. Since 2004, Clos des Jacobins has been owned by Thibaut and Magali Decoster.
The vineyard
Since the 17th century, the 8.3 hectare vineyard of this Grand Cru Classé is the only unsegmented vineyard at the heart of the great terroirs of Saint-Émilion. Located at the foot of the hill and benefiting from an excellent south-facing exposure, the vines are 30 years old on average and are planted on a very large limestone terroir. The vineyard is managed using sustainable agricultural practices.
Vinification and ageing
Following manual harvesting in crates from September 30th to October 9th, the grapes are rigorously sorted. Maceration is carried out at between 12 and 32 degrees Celsius and the vatting lasts 20 days. Punching down of the cap and delestage precede malolactic fermentation in new barrels. The wine is aged for 18 months in barrels (60% of which are new).
The blend
Merlot (80%), Cabernet Franc (18%) and Cabernet Sauvignon (2%).
