Appearance
This wine reveals a beautiful red colour.
Nose
Wonderfully delicate, the bouquet opens on a precise mineral thread. It then reveals superb aromatic complexity, blending juicy red and black fruit with a subtle hint of spice and floral notes.
Palate
The palate is captivating, with a perfect balance between roundness and crunch. Boasting a velvety texture and remarkably fine tannins, it offers flavourful, well-structured substance without any heaviness. A lovely freshness carries the wine through to a persistent, mineral finish.
Food and Wine Pairing
This versatile cuvée will beautifully complement a charcuterie board or roasted meats such as beef and pork. For more refined pairings, it will pair wonderfully with hay-cooked duck, poultry in a creamy sauce, or a characterful cheese such as truffled Brie.
Serving and Cellaring
To fully appreciate L'O de la Vie 2024, it is recommended to serve it at a temperature of between 17 and 18°C. Approachable in its youth, this red wine can also be cellared and enjoyed until around 2033.
Burgundian Elegance at the Heart of the Minervois AOC
The Estate
Born from the shared passion of two renowned Burgundian winemakers, Domaine Anne Gros & Jean-Paul Tollot was founded in 2006 in the Languedoc. Now at the helm of this roughly 21-hectare estate, Anne Gros and Jean-Paul Tollot have chosen to bring their expertise and pursuit of finesse to the sun-drenched terroirs of southern France. The estate stands out for its environmentally respectful approach and gentle winemaking, resulting in wines that combine Mediterranean depth with the precision and elegance typical of the Côte d'Or.
The Vineyard
The grapes for this cuvée come from a two-hectare plot located in the hamlet of Cazelles, on the heights of the Minervois appellation. Planted at an altitude of around 220 metres on the slopes of the Ruisseau de la Vie, the vines thrive on clay-limestone and sandy soils. This high-altitude terroir, surrounded by garrigue scrubland, benefits from strong temperature variations that encourage slow ripening of the berries, preserving exceptional freshness. The vineyard is managed according to the principles of sustainable viticulture.
Winemaking and Ageing
The grapes for L'O de la Vie 2024 are harvested exclusively by hand to preserve the integrity of the berries. In the cellar, the winemaking process draws on Burgundian methods, with full destemming to highlight the purity of the fruit and the finesse of the tannins. Fermentation takes place in temperature-controlled stainless steel tanks. Ageing is then carried out entirely in tank, with no oak influence whatsoever, in order to convey the transparency of the terroir and the aromatic brightness of the grape variety.
