Tasting
Colour
This white wine reveals a colour that may show a slight natural haze, reflecting bottling carried out without filtration or fining in order to preserve the full authenticity of the fruit.
Nose
The aromatic bouquet opens with vibrant notes of citrus, recalling lemon and lime, nuanced by subtle touches of grapefruit and stone fruit. Ageing on the lees enriches the whole with delicate hints of brioche and orange zest.
Palate
The attack reveals a striking minerality and pronounced salinity, evoking iodine and crushed rock. Carried by lovely vivacity and refreshing acidity, this wine offers a precise, focused palate. Its moderate body reveals a perfect balance between mineral tension and an agreeable textural roundness.
Food and wine pairing
This cuvée pairs wonderfully with seafood such as oysters, shrimp or lobster, whose salinity will echo that of the wine. It will also enhance poultry in light cream or lemon sauce, as well as spring vegetables like asparagus. When it comes to cheese, fresh goat cheese or an aged hard cheese will make excellent choices.

The estate
Founded in 2003 by Julien Mareschal, then just twenty-three years old, Domaine de la Borde is a key reference in the Jura. Located on the renowned terroirs of Pupillin, this artisanal estate spans a five-hectare vineyard. Still led today by Julien Mareschal, the estate stands out for its deep commitment to environmentally friendly viticulture, certified organic and biodynamic since 2012. The producer's philosophy is built on a minimal-intervention approach, aiming to express with the greatest precision the unique geological identity of its plots.
The vineyard
The grapes come from plots within the Arbois-Pupillin appellation, rising to 450 metres in altitude on steep west-facing slopes. The vines, aged between 40 and 55 years, are deeply rooted in complex soils made up of clay-limestone surfaces resting on blue Lias marls. The land is worked with great care, favouring natural cover crops and ploughing, while the harvest is carried out entirely by hand to ensure a rigorous selection of the fruit.
Winemaking and aging
The winemaking of the Chardonnay "Terre du Lias" 2024 relies exclusively on the action of indigenous yeasts. Alcoholic fermentation takes place in large 600-litre wooden vessels, allowing for gentle micro-oxygenation. The wine then undergoes malolactic fermentation before ageing on the lees for twelve months, with regular topping up to preserve its freshness. Bottling is carried out without any fining or filtration.
