A complex, floral white wine from the Côtes du Roussillon
The estate
Named Best Young Sommelier of France at the age of 21, Hervé Bizeul fell in love with the enchanting landscapes of the majestic Cirque de Vingrau, at the foot of the Eastern Pyrenees in Roussillon. In 1997, Hervé Bizeul, a restaurateur and writer with a deep passion for the land and the vine, founded Domaine du Clos des Fées with his wife.
Over the vintages, Domaine du Clos des Fées has become one of the most prestigious names in Roussillon wine. Expressing the singularity of their native terroir, these exceptional cuvées captivate with their intensity and balance while also offering remarkable ageing potential.
The vineyard
A benchmark among the great Roussillon wines, Domaine du Clos des Fées tends a 30-hectare vineyard divided into 112 plots across a true mosaic of soils, farmed using sustainable viticulture.
The wine
Les Sorcières from Domaine du Clos des Fées is a Côtes du Roussillon wine made from young Vermentino and Roussanne vines planted in 2011 on clay-limestone soil, old Macabeu vines from the “Lou Bac” lieu-dit and Grenache Blanc (planted in 1945) from the “Mas Farine” lieu-dit.
Vinification and ageing
Direct whole-bunch pressing at low temperature and low pressure for 5 hours to preserve the purity of the fruit and prevent oxidation. After light settling to allow the lees to form, fermentation takes place at low temperature in vats with indigenous yeasts. Aged on fine lees and fined with clay.

Tasting
Colour
The wine displays a brilliant pale gold colour with subtle green highlights.
Nose
Airy and floral, the nose offers a complex blend of citrus notes (Menton lemon, candied grapefruit peel) and touches of ripe white peach and hawthorn blossom.
Palate
With its fruity, airy attack, the palate is fresh and flavourful. The finish reveals complex aromas of baked apple and lemon meringue pie.
Food and wine pairings
This wine is the perfect partner for shellfish and crustaceans, as well as grilled fish and spicy samosas.
