Food and wine pairings
This white wine pairs beautifully with grilled or pan-fried fish, a seafood platter and poultry in a cream sauce. It is also a superb match for snails in parsley butter or hard cooked cheeses such as a young Comté or a summer Beaufort.
Serving and cellaring
This Saint-Véran Village "Les Amourettes" 2024 is scheduled for release and shipment from September 2026, a reflection of its extended ageing and promising cellaring potential.
The elegance and precision of a white wine from Saint-Véran
The estate
Founded in 2021 by Philippe Pascal and oenologist Guillaume Marko, Domaine Mont Bessay stands out for its ambition to produce great terroir-driven wines. Perched on the heights of Juliénas, on the border between Beaujolais and Burgundy, the estate has forged a distinctive identity at the meeting point of limestone and granite soils. Now run by its founders alongside technical director Benjamin Rousset, the estate is distinguished by a rigorous plot-by-plot approach and environmentally friendly practices, which have quickly earned its cuvées a place among the region's benchmarks.
The vineyard
The plots dedicated to the Saint-Véran appellation lie in the Mâconnais, on terroirs renowned for their predominantly limestone and clay-limestone soils. True to its environmental philosophy, the estate follows the principles of organic and biodynamic farming. The vines receive meticulous care throughout the year, culminating in a harvest carried out by hand to preserve the integrity and quality of the grapes.
Winemaking and ageing
The estate's philosophy favours minimal intervention in the cellar. Fermentations take place naturally, without the addition of commercial yeasts. The Saint-Véran Village "Les Amourettes" 2024 then undergoes extended ageing of around two years in the estate's new winery, allowing the wine to develop its full complexity before release.
