Tasting

Appearance
This wine displays a deep, brilliant ruby colour with purple highlights in its youth.

Nose
The bouquet is remarkably complex and fragrant. It offers abundant aromas of cherries, plums and red fruit, harmoniously intertwined with notes of rose petals and violet. Gentle spices, hints of warm earth and smoke, and subtle nuances of roasted coffee and vanilla add further depth to this aromatic palette.

Palate
Ample, fleshy and concentrated, the palate reveals a fine, silky texture of great elegance. The velvety, ripe and powdery tannins are perfectly balanced by lively acidity and fine mineral tension. The wine is fresh and easy to enjoy, stretching into a vibrant finish of remarkable length.

Food and wine pairing
This grand cru will beautifully complement noble game such as a wild boar stew, venison or hare, served with mushrooms and a red wine reduction. It also pairs wonderfully with roast Bresse poultry, wild duck or a fine cut of dry-aged beef. For a more contemporary approach, serve it with red meats accompanied by tangy red fruit reductions or roasted root vegetables. Finally, aged hard cheeses such as a mature Comté or an alpine Beaufort make an excellent choice.

Serving and cellaring
The Chambertin-Clos de Bèze Grand cru 2019 has considerable ageing potential. Although it can be approachable and charming in its youth, its structure will allow it to develop gracefully over several decades.

The elegance of a great Burgundy terroir by Domaine Perrot-Minot

The estate
Located in Morey-Saint-Denis, in the heart of Burgundy, Domaine Perrot-Minot was founded in the second half of the 20th century, succeeding the family estate Merme-Morizot. Today, Christophe Perrot-Minot and his wife Marit Lindal Perrot-Minot run the property. The estate farms thirteen hectares of vines, eight of which it owns, all certified organic since 2023. It stands out for a philosophy rooted in respect for the terroir, producing wines of great finesse with a silky texture that combine density and elegance.

The vineyard
The Chambertin-Clos de Bèze terroir lies mid-slope on a gentle east-facing incline, at an altitude of between 270 and 280 metres. This site enjoys a slightly cool climate, swept by northerly winds while sheltered from the damp westerly winds. The deep soils consist of limestone scree and silt accumulated over thousands of years, resting on layers of marl and Bajocian limestone. The grapes are purchased from old vines more than 55 years old.

The vintage
Spring 2019 saw highly changeable weather, alternating between sunny spells and low temperatures. Cool conditions during flowering caused coulure, thereby reducing yields. A scorching June then gave way to a hot, dry summer. Ideal weather conditions allowed harvesting to begin on 17 September, with grapes in excellent health and beautifully ripe. Average yields for this vintage remained below 20 hl/ha.

Vinification and ageing
To produce the Chambertin-Clos de Bèze Grand cru 2019, the bunches are hand-harvested and rigorously sorted. Up to 60% whole bunches are used during vinification. After a cold pre-fermentation maceration lasting five to seven days, fermentation begins with indigenous yeasts, accompanied by daily punch-downs and pump-overs. The wine is then aged for around eighteen months in oak barrels, 30 to 40% of which are new, without racking. Bottling is carried out by gravity, without fining or filtration.
