Tasting
Colour
The colour reveals an intense ruby red hue, almost black at its core, illustrating perfectly controlled extraction and full maturity.
Nose
The bouquet opens with a complex and vibrant aromatic expression. It first reveals aromas of red fruits, blackcurrant, gooseberry and cherry, enhanced by subtle earthy touches. With aeration, nuances of licorice, violet, spice and undergrowth unfold, supported by a mineral backbone characteristic of its terroir.
Palate
The palate offers a graceful, well-defined structure, carried by tannins of exquisite finesse that coat the mouth with softness. Both dense and elegant, this wine reveals multidimensional flavors that stretch out into a generous, full finish with remarkable mineral persistence.
Food and wine pairing
This great red wine from France pairs ideally with dishes of character able to match its natural power. It will beautifully complement feathered game, roasted lamb, beef ribs or poultry prepared in a wine sauce. For a bolder approach, duck breast with cherries or a platter of ripened soft cheeses will make for perfect pairings.
Service and storage
To fully appreciate the complexity of the Mazoyères-Chambertin Grand Cru 2020, it is recommended to serve it at a temperature between 12 and 14°C in its youth, and between 14 and 16°C after a few years of cellaring. Decanting for 30 to 60 minutes before tasting is advised. With its remarkable structure, this wine has excellent aging potential and can be enjoyed until around 2030.
The Elegance and Purity of a Gevrey-Chambertin Grand Cru
The estate
Born from the union of family vineyards in the mid-19th century, Domaine Perrot-Minot officially took its current name in 1963. Located in Morey-Saint-Denis, at the heart of Burgundy, this roughly 8-hectare estate is now run by Christophe Perrot-Minot. Representing the twelfth generation, he has raised the estate among the region's most essential references. A committed advocate of environmentally friendly, organic-certified viticulture, he favors very limited yields and a minimally interventionist approach in the cellar to bring out the authentic expression of his terroirs.
The vineyard
The Mazoyères-Chambertin appellation, one of the most little-known in the region, spans just over 3 hectares within Gevrey-Chambertin. This cuvée comes from a one-hectare plot planted with 55-year-old vines. Facing east and located at an altitude of between 240 and 280 meters, this terroir rests on shallow soils composed of limestone gravel, marl and iron. To preserve the delicate structure and biological life of these soils, the estate favors traditional plowing with a horse.
The vintage
The year 2020 was marked by particularly demanding weather conditions, with a summer dominated by intense heat. This hot, dry climate led to an exceptional concentration in the berries while drastically reducing yields at harvest.
Winemaking and aging
The harvest is entirely done by hand, followed by meticulous sorting in the vineyard and then a second pass in the cellar using state-of-the-art optical sorting technology. The Mazoyères-Chambertin Grand Cru 2020 ferments with indigenous yeasts, with gentle extraction favoring light pump-overs. Maceration time is adjusted according to the needs of the vintage. Aging then takes place in oak barrels (40 to 50% new wood) for 12 to 14 months. To preserve all its aromatic complexity, the wine is bottled without fining or filtration.
