The estate of Domaine du Cellier aux Moines was founded in 1130 by the Cistercian monks of the Abbey of La Ferte. They decided to produce the best wines for the papacy and liturgy. They decided to identify and select the best terroirs, to create the first Clos de Bourgogne. Catherine and Phillippe Pascal restored the castle in 2004. Domaine du Cellier aux Moines is a vineyard of 4.7 hectares and is a Givry Premier Cru. The blend is 100% Pinot Noir. The estate has gradually expanded to the Cote de Beaune and produces "Les Pucelles". Cellier aux Moines began converting to biodynamic agriculture in 2016, one year after the integration of a 4 level gravity vinification system.
