Tasting Notes
Appearance
The colour reveals a pale yellow hue with light green highlights, showing off a beautiful brilliance and clear limpidity.
Nose
The nose opens on citrus aromas such as lemon and grapefruit, mingled with notes of white-fleshed fruit and flowers such as acacia and hawthorn. Subtle touches of fresh hazelnut and vanilla reveal its ageing process.
Palate
On the palate, this wine offers a supple texture and moderate density. Balance is maintained by a lovely acidity, leading to a nervy, taut finish marked by a chalky minerality.
Food and Wine Pairing
This white wine pairs perfectly with grilled or roasted fish, as well as seafood such as pan-seared scallops. It also goes very well with poultry in a light cream and mushroom sauce, or with soft-rind cheeses and fresh goat's cheeses.
Serving and Cellaring
This 2021 Montagny can be enjoyed now, but will also develop a deeper golden colour and additional complexity after a few years of bottle ageing.
The Precision and Freshness of a White Burgundy Wine
The Estate
Historically founded by Cistercian monks around 1130, Domaine du Cellier aux Moines underwent a true renaissance with its contemporary revival in 2004 by its current owners. Located in Burgundy, this estate stands out for its environmentally respectful approach. The domaine combines nine centuries of monastic heritage with modern facilities, producing wines renowned for their precision and their faithful expression of terroir.
The Vineyard
This cuvée comes from the Montagny appellation. Resting on predominantly limestone soils, the vineyard benefits from optimal sunshine while retaining a lovely freshness. It is farmed according to the principles of organic and biodynamic agriculture, fostering soil vitality and the natural expression of the vines.
The Vintage
The year 2021 was marked by complex weather conditions in France, and particularly in Burgundy. Spring frost episodes in particular affected the vegetative cycle, leading to reduced yields. Despite these climatic challenges, this vintage preserved a lovely freshness and remarkable tension in the white grapes.
Winemaking and Ageing
The grapes for this 2021 Montagny are harvested by hand. Within an innovative gravity-flow winery, the grapes are pressed as whole clusters to preserve the purity of the juice. Fermentation takes place in tank using indigenous yeasts, followed by ageing in barrel. This low-intervention approach allows the oak notes to be subtly integrated while preserving aromatic freshness.
