The Freshness and Sophistication of a Santenay Premier Cru White Wine
The Estate
While the viticultural history of the site dates back to Cistercian monks in 1130, the Domaine du Cellier aux Moines as it exists today was established in 2004 following its acquisition by Philippe and Catherine Pascal. Located in Burgundy, this family estate is now run by the couple and their three children. The vineyard spans 10.50 hectares and stands out for its environmentally friendly practices, certified biodynamic. The estate is also unique for its innovative underground facilities, which allow for winemaking that relies entirely on gravity.
The Vineyard
The climat classified as Premier Cru "Beauregard" is located within the Santenay appellation, a village situated at the southern end of the Côte de Beaune. This plot benefits from a privileged geographical position with an ideal east-to-south exposure. The estate applies a meticulous plot-by-plot approach across all its vines, cultivated according to biodynamic principles to fully express the uniqueness of this terroir.
The Vintage
The year 2023 was marked by strong mildew pressure throughout the vine's growing cycle. Faced with these demanding weather conditions, extremely rigorous berry selection and highly precise viticulture were required to ensure a healthy, high-quality harvest.
Winemaking and Aging
The Santenay 1er Cru "Beauregard" 2023 is crafted in modern facilities spread across four levels, three of which are underground. This innovative winery allows the entire process, from the reception of the grapes through to ageing, to be carried out using gravity alone. The complete absence of pumping protects the juices from oxidation and stress, while the underground cellars ensure natural regulation of temperature and humidity during barrel ageing.
