Tasting Notes
Colour
This white wine displays a beautiful pale gold colour, illuminated by delicate silvery highlights.
Nose
The aromatic bouquet opens with dominant notes of white flowers, accompanied by scents of white-fleshed fruits such as pear and peach. Subtle touches of fresh almond complete the ensemble.
Palate
The palate offers a superb balance between silky roundness and lovely freshness. The ample, rich attack gives way to a tense finish, marked by a persistent, highly characteristic salinity.
Food and Wine Pairing
This gastronomic wine pairs wonderfully with delicate fish, pan-seared scallops or grilled prawns. It also perfectly accompanies roasted poultry, white meats served with a light sauce, as well as soft-rind cheeses or fresh goat's cheese.
Serving and Ageing
To fully appreciate the Montagny 1er Cru "Les Combes" 2022, it is recommended to serve it at a temperature of 12°C. This age-worthy wine has a fine structure that allows it to evolve favourably in bottle for several years.
The Freshness and Minerality of a Montagny Premier Cru
The Estate
Located in Givry in Burgundy, France, Domaine du Cellier aux Moines carries on a Cistercian heritage dating back to the 12th century. The present-day estate was established when it was acquired in 2004 by Catherine and Philippe Pascal, its current owners. Today, they oversee a vineyard of around 10.5 hectares, farmed organically and biodynamically. Recognised for its environmentally respectful approach, the estate also stands out for its modern facilities, including a gravity-flow winery, thereby combining historical heritage with contemporary technical precision.
The Vineyard
This cuvée comes from a small 70-are plot within the Montagny appellation. Planted in 2012, these vines enjoy full south-facing exposure and thrive at an altitude of between 270 and 310 metres. The terroir consists of clay-limestone soils dotted with oolitic pebbles, promoting excellent grape ripeness. The entire plot is farmed according to the demanding principles of biodynamics, with harvesting carried out exclusively by hand.
The Vintage
In Burgundy, 2022 was marked by sunny, warm weather. Although generous, this vintage proved less extreme than other recent years, allowing the berries to reach optimal ripeness while retaining excellent acidity and freshness.
Winemaking and Ageing
As soon as they arrive at the winery, the grapes destined for the Montagny 1er Cru "Les Combes" 2022 undergo gentle pressing to preserve the full purity of the juice. Fermentation then takes place in oak barrels. The wine is subsequently aged on fine lees for twelve months. All operations, from the reception of the harvest through to bottling, are carried out by gravity in order to minimise mechanical intervention as much as possible.
