Black cherry, licorice, violet and a hint of smoke create a complex aromatic profile. Grippy tannins dominate, yet are balanced by ample acidity. The palate reveals juicy black plum, blackberry and notes of clove and rosemary stem. This dark-fruited wine boasts a robust herbaceous quality, making it a seamless pairing for seared squab or quail dishes.

Decanter

Although vinified separately, the assemblage from the entire Clos du Cellier aux Moines transcends the sum of its parts, with a fragrant nose of plum and mulberry with hints of spice, smoke, and earth, and impressive grip and density on the palate. It is a blend of a small amount of the older clonal selection vines with different blocks of younger 'massale’ vines, all farmed separately. The intense attention to detail of this approach paid strong dividends in this difficult year.

Youthful nose of redcurrants and sour cherries with rooty, black tea and toasty nuances. Medium-bodied with restrained, velvety tannins, this expands at the finish. Needs some aeration to open up. Harvested with a yield of just eight hl/ha due to the spring frosts. Drink or hold.

Tasting

Appearance
The colour reveals a beautiful, deep ruby to garnet hue.

Nose
Expressive and complex, the nose exudes aromas of red and black fruits (raspberry, morello cherry, black cherry) intertwined with floral notes of violet and spicy touches of pepper and liquorice.

Palate
Fleshy and full-bodied, the palate seduces with its generous texture and fine, silky tannins. The finish, remarkably persistent, lingers on fruity notes accompanied by a delicate salinity.

Food and Wine Pairing
Ideal with full-flavoured meats, this wine pairs perfectly with game in sauce, such as a wild boar stew. It also goes wonderfully with roasted poultry, white meats with mushrooms, as well as soft-rind cheeses such as Époisses or Langres.

Serving and Cellaring
For optimal enjoyment of this Burgundy wine, it is recommended to serve it at a temperature between 14 and 15°C. Decanting for around one hour is advisable while the wine is young, to release its full aromatic complexity.

The Authentic Expression of a Givry Terroir

The Estate
Heir to a Cistercian heritage dating back to 1130, Domaine du Cellier aux Moines was established in its current form in 2004, when it was taken over by Catherine and Philippe Pascal. Located on the heights of Givry, this estate of around ten hectares stands out for its respectful approach to living soils. Under the technical direction of Guillaume Marko, the estate combines tradition and innovation, notably through a 100% gravity-fed winery that is unique in Burgundy. Certified organic and biodynamic, it is now recognised for the precision of its wines.

The Vineyard
This Givry wine comes from the historic heart of the appellation, on a south-facing, slightly windswept slope situated between 269 and 298 metres above sea level. The vines thrive on a terroir made up of clay alluvium and oolitic limestone pebbles resting on marl. The vineyard is farmed with great environmental rigour, promoting soil vitality through ploughing and the exclusive use of natural preparations.

Winemaking and Ageing
The harvest is entirely done by hand to preserve the integrity of the grapes. The estate's philosophy, summed up by the motto "simplex natura", favours minimal intervention. Vinification is carried out with whole clusters and very little destemming, within an innovative winery that operates exclusively by gravity. Ageing is then carried out sparingly, combining the use of tanks and barrels to refine the wine's structure without masking the expression of the fruit.
