The estate

While the site's Cistercian origins date back to 1130, Domaine du Cellier aux Moines took its current form when it was established in 2004 by Philippe and Catherine Pascal, its current owners. Located in Givry, in Burgundy, this estate of around ten hectares stands out for its historic walled vineyard, preserved for nine centuries, and its modern facilities, including a gravity-flow winery. Technically overseen by Guillaume Marko, the estate is certified organic and biodynamic, reflecting a philosophy of respect for living systems that gives rise to wines of remarkable precision.

The vineyard

This Bourgogne cuvée comes from a tiny 0.20-hectare plot located in the commune of Montagny. Planted in 1945 using massal selection, these old vines thrive at altitude on a hillside extremely rich in limestone, just below a former quarry that lends its name to the "Sous les Roches" lieu-dit. Farmed according to organic principles, this distinctive terroir gives the grapes remarkable concentration and minerality.

Winemaking and aging

Crafted with great care, the Bourgogne Aligoté "Sous les Roches" Vieilles Vignes 2020 undergoes vinification followed by an extended lees aging period of around 16 months. This process, combined with time spent in oak barrels, allows the wine to develop its creamy texture and aromatic complexity while preserving its natural tension.
