The estate
Les Vignes Oubliées is an utter gem in the Languedoc region and stems from a project between Jean-Baptiste Granier and Olivier Jullien. The two enthusiasts worked to preserve old vines located in the commune of Saint-Privat, in the Larzac, that rested on schist, sandstone and clay-limestone soils. The vines are managed organically. Producing authentic and pure wines that encourage wine lovers to share, to meet with loved ones and to be generous, Les Vignes Oubliées are at the very heart of beautiful Languedoc wines.
The vineyard
Autour du Cinsault is a Coteaux du Languedoc wine made from vineyards located in the commune of Saint Privat. The vines are planted on sandstone and schist soils.
Vinification and ageing
Vinification is carried out with a constant search for respect for the fruit and preservation of the freshness conferred by the terroir. The grapes are sorted in the vineyard and then in the cellar before partial destemming. Vatting time for 15 to 20 days. Fermentation with temperature control. Aged for 12 months in demi-muids (10%) and in a natural cave.
