Description
Characteristics and Tasting Tips for Breit Extra-Brut by Mélanie Pfister
Tasting
Nose
The bouquet reveals brioche aromas derived from yeast autolysis, while retaining a fruity and fresh expression. This aromatic complexity results from the harmonious Blend between the finesse of Chardonnay and the generosity of Pinot Blanc and Auxerrois.
Palate
On the palate, this Crémant d'Alsace extra-brut reveals a well-balanced structure, combining freshness and vinosity. The low dosage, made possible by grape maturity and extended aging, highlights the winey character of this cuvée.
Food and Wine Pairings
Perfect as a festive aperitif, this cuvée also elegantly accompanies a complete meal, from appetizers to the cheese platter. It pairs particularly well with lean fish, shellfish and poultry.
A Fresh and Well-Balanced Crémant d'Alsace
The Estate
Created in 1780 in Dahlenheim in Alsace, Domaine Pfister covers 10 hectares of clay-limestone soils. Mélanie Pfister, the current owner since 2008, is the first woman to head this eight-generation family estate. Graduated in agronomy and oenology, she converted the estate to organic farming in 2015 and then to biodynamics in 2021. Co-founder of the association Divines d'Alsace, she embodies the Alsatian wine revival by combining family tradition and ecological innovation.
The Vineyard
"Breit Extra-Brut" is a Crémant d'Alsace taking its name from the lieu-dit Hangenbreite, meaning "the broad slope". This steeply sloping vineyard on marl-limestone soils offers ideal conditions for the expression of an exceptional Alsatian terroir.
Vinification and Aging
Hand harvesting is followed by whole-cluster pressing. Alcoholic and malolactic fermentations take place in thermoregulated stainless steel tanks. After aging on fine lees until bottling, the Breit Extra-Brut undergoes a second fermentation according to the traditional method, followed by more than 24 months of aging on racks, lending this cuvée its exceptional complexity and finesse.
Grape Varieties
Chardonnay (60%), Pinot Blanc (20%) and Pinot Auxerrois (20%)
