Colour
The colour of this wine reveals an intense purple, almost scarlet, with violet reflections.
Nose
The nose is complex and elegant, blending notes of black fruits such as blackberry and blackcurrant, accompanied by subtle touches of dried herbs and spices such as nutmeg and clove. There is also a freshness brought by aromas of red fruits like pomegranate and cranberry.
Palate
The attack on the palate is vibrant, marked by flavours of black fruits and a hint of sarsaparilla. The mid-palate is balanced, with silky and fine tannins, supported by notes of mocha and a subtle umami. The finish is long and harmonious.

The estate
Parker Estate, founded in the renowned wine region of Coonawarra, is a reference for lovers of Australian cabernet sauvignon. This estate stands out for its ability to produce wines of great longevity and exceptional quality, thanks to the unique combination of limestone terroirs and a microclimate that promotes slow and complete maturation of the grapes.
The vineyard
The 2021 Terra Rossa Cabernet Sauvignon comes from eight distinct plots of the "Abbey" vineyard, located in the south of Coonawarra. This unique terroir, with its terra rossa soils on a limestone subsoil, allows excellent water retention and optimal drainage, thus providing ideal conditions for viticulture. The combination of warm days and cool nights extends the maturation period, thereby enhancing the concentration of the fruit and the elegance of the tannins.
Vinification and ageing
After the harvest in April, the grapes fermented in closed vats for 13 days. About 10% of the grapes benefited from an extended maceration of 30 days to enhance the aromas and structure of the wine. After malolactic fermentation in stainless steel vats, the wine was aged for 12 months in French oak barrels, 40% of which were new.
