Description
Characteristics and Tasting Tips for Fines Bulles Rosé 2024 by Peyrassol
Tasting notes
Appearance
Revealing a delicate pale coral hue with salmon highlights, this sparkling wine stands out for the finesse of its bubbles.
Nose
Remarkably fresh, the aromatic bouquet releases crisp notes of white fruit and fresh grapes, harmoniously underscored by touches of red berries.
Palate
The tasting unfolds in three stages: a generous attack marked by vineyard peach gives way to the tangy vivacity of red fruit. The finish, of exceptional elegance, offers a subtle salinity carried by an exceptionally delicate effervescence.
Food and wine pairings
Ideal as an aperitif, this wine pairs wonderfully with raw fish such as ceviche or tartare, as well as with grilled fish seasoned with Mediterranean herbs. It also elevates light shellfish, dishes featuring Provençal vegetables, foods with saline notes, and white meats delicately scented with citrus.
The sparkling elegance of a historic estate in Provence
The estate
Founded in 1204 when it was donated to the Knights Templar, Peyrassol is a historic estate. Now run by Philippe Austruy, who acquired the property in 2001, this vast 850-hectare estate stands out for its multidisciplinary approach. Indeed, Peyrassol combines excellence in certified organic viticulture with a strong cultural commitment, housing one of the largest open-air contemporary art collections in Europe, as well as a Michelin-starred gastronomic offering.
The vineyard
Nestled on the foothills of the Massif des Maures at an altitude of between 220 and 350 metres, the vineyard enjoys a Mediterranean climate sheltered from maritime humidity. The vines, spread across 53 distinct plots, are cultivated according to strict organic farming principles, without any chemical inputs, with cereals sown between the rows to preserve soil life. Although it comes from this exceptional Provençal terroir, this wine is classified under the Vin de France appellation.
Vinification and ageing
The Fines Bulles Rosé 2024 is made using the Charmat method. The second fermentation, which creates the sparkle, takes place in large stainless steel tanks in order to preserve all the purity and delicacy of the fruit. The wine then benefits from ageing on lees in bottle, allowing the bubbles to integrate perfectly and develop an effervescence of great finesse.
