A vibrant and subtle Cabernet Franc from the Finger Lakes
The estate
The landscape of the vineyards in the Finger Lakes region, in the state of New York, is characterized by steep hillsides plunging towards long glacial lakes. It is here, at the heart of this picture, that the Ravines estate is revealed, masterfully led by Morten Hallgren. Originally from Copenhagen, he honed his skills in France before settling in the United States. After obtaining his DNO in Montpellier, he worked in estates with varied climates, from Cos d’Estournel in Bordeaux to Fort Stockton in Texas, before settling in the Finger Lakes in 1999.
The vineyard
In this region, the continental climate with harsh winters and hot summers is tempered by the glacial lakes, extending the growing season. The Ravines estate, the only property in the region to predominantly cultivate on limestone soils, operates four vineyards, three of which are owned, as well as the prestigious Argetsinger vineyard. This Cabernet Franc comes from two distinct vineyards in the Finger Lakes: White Springs Vineyard and 16 Falls Vineyard.
Vinification and aging
Fermentation was conducted with manual punch-downs and pump-overs, followed by extended skin contact (2 to 3 weeks). Malolactic fermentation occurred spontaneously in barrels. The wine was then aged for 12 months in 20-hectoliter foudres.
