Tasting Nose
Shaped by the exceptionally dry conditions of the year, the nose reveals pronounced floral notes of rose and jasmine. These essences blend harmoniously with indulgent aromas of tropical fruits, particularly mango and banana. Palate
The attack is marked by an initial sweetness and moderate sugariness. The palate then evolves toward complex, lingering vegetal flavours, offering an ample texture perfectly carried by its 50% ABV. The finish shows remarkable persistence, playing on a subtle interplay of freshness and complexity. Pairings and Tasting Moments
For a neat tasting, it is best served at room temperature (around 20°C) without ice, allowing it a brief moment of aeration in the glass to release its aromas. It is also traditionally enjoyed as a Ti'Punch, ideally paired with cod or shrimp accras, whose salty, maritime flavours perfectly balance the cocktail's sweetness. Mixology
Beyond the essential Ti'Punch (5 cl of rum, a teaspoon of sugar or cane syrup, and a quarter of freshly squeezed lime), this spirit lends itself remarkably well to contemporary creations. Maison Clément: The Historic Excellence of Rhum de la Martinique
Founded in 1887 by Dr. Homère Clément on the Acajou estate in Le François, Maison Clément is an emblematic figure of Rhum de la Martinique. Originally a sugar cane producer, the estate made a strategic shift toward distillation during the First World War. Today, the property belongs to the Bernard Hayot Group, which has managed to preserve its family heritage while modernising its infrastructure, notably with a state-of-the-art new bottling facility. Under the general management of Charles Larcher and the expertise of cellar master Julien Thimon, Clément continues to uphold a centuries-old savoir-faire. The estate, which spans 16 hectares and is home to a remarkable botanical garden, embodies a holistic approach to terroir, combining agricultural tradition with technical innovation to produce spirits of exceptional quality. Canne Bleue 2023: The Pure Expression of a Monovarietal White Rhum Agricole
A pioneer since 2001, this white rhum agricole is made exclusively from the B69 566 variety, celebrated for its blue-violet hues. Canne Bleue 2023 draws its uniqueness from a harvest shaped by a particularly dry season, yielding a very high sugar content. After batch fermentation lasting 24 to 36 hours with no added enrichment, the cane wine is distilled in a traditional copper Creole column.

The major innovation of this vintage lies in its 5- to 7-month rest in stainless steel tanks, enhanced by an innovative micro-bubbling process. This technique of gentle agitation and slow reduction releases volatile aromas while giving the rum exceptional roundness.

A true collector's item, this limited edition comes in a visual triptych paying tribute to Martinican nature through three designs: Sky, Earth, and Water. The excellence of this vintage was further recognised with a Gold Medal at the Concours Général Agricole de Paris in 2024.
