Founded in 1743 in Nada, a historic district of Kobe in Japan’s Hyōgo Prefecture, Hakutsuru now stands as the country’s leading sake brand. Led by Kenji Kano, this House perpetuates age-old brewing traditions while integrating contemporary techniques, notably low-temperature fermentation. Its name, meaning “white crane,” graces all of its productions.
