Founded in 1743 in Nada, a historic district of Kobe in Japan’s Hyōgo Prefecture, Hakutsuru now stands as the country’s leading sake brand. Led by Kenji Kano, this House perpetuates age-old brewing traditions while integrating contemporary techniques, notably low-temperature fermentation. Its name, meaning “white crane,” graces all of its productions. Hakutsuru stands out for its rigorous selection of nakadori, the noblest fraction of fermentation, and for its international reach through its American and European subsidiaries, while maintaining production exclusively in Japan.
